GOOD Unnamed Recipe
Just discovered a new, quick really good recipe. Take any kind of cake mix (try the confetti) and mix (using mixer) it with 1 cup of Cool Whip and one large egg. Roll into balls and dip in powdered sugar. Bake at 350 for 8 to 10 minutes.

WATERGATE SALAD
This is very simple to make & very good!
I made this the last time on 4/28/2010.

1 (3.4 ounce) package instant pistachio pudding mix
1 (20 ounce) can crushed pineapple, drained
(save the juice).
1 cup miniature marshmallows
1/2 cup chopped walnuts or pecan pieces
1 (8 ounce) container frozen whipped topping, thawed

Directions:
In a large bowl, mix together pudding mix, pineapple with just a little bit of the juice,
marshmallows, and nuts.
Fold in whipped topping. Chill.


SKY-HIGH STRAWBERRY PIE

This is a different recipe for strawberry pie than the one my Aunt Jean makes which is shown on the first recipe page here.

Ingredients:
3 quarts fresh strawberries, divided
1 1/2 cups sugar
6 tablespoons cornstarch
2/3 cup water
red food coloring
1 (10 inch) deep-dish pastry shell, baked
1 cup heavy cream
1 1/2 tablespoons instant vanilla pudding mix

Directions:
1.In a large bowl, mash enough berries to equal 3 cups. In a saucepan, combine the sugar and cornstarch. Stir in the mashed berries and water; mix well. Bring to a boil over medium heat, stirring constantly. Cook and stir for 2 minutes. Remove from the heat; add food coloring if desired. Pour into a large bowl. Chill for 20 minutes, stirring occasionally, until mixture is just slightly warm. Fold in the remaining berries. Pile into pie shell. chill for 2-3 hours. In a small mixing bowl, whip cream until soft peaks form. Sprinkle pudding mix over cream and whip until stiff. Pipe around edge of pie or dollop on individual slices.

Easy TACOS

Ingredients:
1 pound ground beef
1 medium onion, chopped
1/2 teaspoon chili powder
1 (10.75 ounce) can Campbell's® Condensed Fiesta Nacho Cheese Soup
8 taco shells, warmed
1 cup shredded lettuce
1 medium tomato, chopped

Directions:
1.Cook the beef, onion and chili powder in a 10-inch skillet over medium-high heat until the beef is well browned, stirring often to separate meat. Pour/drain off any fat.
2.Stir 1/2 cup soup in the skillet and cook until the mixture is hot and bubbling.
3.Heat the remaining soup in a 1-quart saucepan over medium-high heat until hot and bubbling. Spoon the beef mixture into the taco shells.
Top with the soup, lettuce and tomato.

MEXICAN CORNBREAD
1 cup yellow cornmeal
1/2 cup flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 Tablespoons sugar
1 cup buttermilk
2 eggs
1/3 cup vegetable oil
1/2 medium onion, chopped
2 large FRESH jalopeno peppers, chopped
1/3 cup canned whole kernel corn (no juice)
3/4 cup grated cheddar cheese
Mix meal, flour, soda, baking powder,
salt, and sugar in a bowl and set aside.
In another bowl mix buttermilk, eggs, and oil.
Stir in the chopped onions, peppers, corn,
and grated cheese.
Add bowl of dry ingredients to these and mix well.
Heat oven to 375 degrees.
Spread 2 Tablespoons of oil in a 10-inch black
cast iron skillet and heat the skillet.
Put the mixture into the skillet (it should sizzle!)
and bake about 25 minutes.
It should be lightly brown on top and barely done in the middle. Immediately upon removing from the oven,
take a butter knife and go around the edges and
gently lift under toward the center as you go around. After just a bit, flip over onto a plate.
Note: The above is not HOT from the peppers.
If you like it real hot (yes, I do!), add more.

"LEMON MERINGUE PIE"

Once upon a time there was a singing cowboy who gave out over the airwaves from a radio station in New Mexico. All too often our hero was hungry---and there was no jingle-jangle in his pockets. So he fell into the habit of interspersing comments about food here and there on the program, mentioning the things he liked best to eat. With melting hearts, the ladies sent them in! Then one day a gal telephoned and said that if the would sing a certain song, two lemon pies would be delivered to the tourist court he called home. He did, and the gal delivered the lemon pies herself. The boy's name? Roy Rogers. And the gal? That's the story. Because not too long after, she became Mrs. Rogers--with Lemon pies making like cupids!
Now Roy Rogers is a Republic star (his latest picture is Utah) but he has never tired of
Mrs. R's lemon pie. So we asked her for the recipe,
for you, and here it is:

Lemon Meringue Pie
1 cup sugar
1 lemon, grated rind and juice
4 tbsp. flour
1 tablespoon margarine
1 cup water
3 eggs separated
Few grains salt
1 baked pie shell

Combine sugar and flour. Add a little of the water; mix smooth. Add beaten egg yolks. Add remaining water. Cook over hot water, stirring constantly, until thick.
Cover, cook 10 minutes. Remove from heat; add salt, grated lemon rind and juice, and margarine. Mix well. Cool slightly. Pour into baked (9-inch) pastry shell. Make a merinque of beaten egg whites and six tablespoons sugar. Swirl on pie.
Bake in moderately slow oven, 325 degrees, 20 minutes. Cool. Yield: 6 portions.

Buttermilk Pie Buttermilk Pie

2 cups sugar
1 stick butter/oleo softened
2 Tablespoons flour
1 cup buttermilk
3 eggs
1 teaspoon vanilla
1 unbaked pie shell

Pre heat oven to 400*
Combine sugar, butter, eggs & flour in a large mixing bowl.
Beat until light & creamy.
Add buttermilk & vanilla, , mix well.
Pour mixture into unbaked pie shell.
Bake for 5 minutes at 400*
Reduce heat to 350* & continue
baking another 45 minutes.
Cool before serving.
